JAMALAYA AU MICHAEL

3 C. Cooked Chicken

1/2 Lb. Bacon

1 Large Onion, chopped

2 Garlic cloves, chopped

1 Green pepper

1 Red pepper

2 Tsp. Creole or Cajun seasoning

1/4 C. Parsley

8 Oz. Fresh sliced Mushrooms

4-6 C. Chicken broth

Hot sauce

1 Large can stewed tomatoes

2 Tsp. Salt

1 Tsp. Pepper

1 1/2 C. Rice

In a large pan, fry bacon.  Remove bacon from pan and chop.  In bacon grease,

saute onion, garlic, peppers for five minutes.  Add mushrooms and saute until

peppers are tender.  In large pot, combine sauted mixture, chicken, 4 cups of

broth, tomatoes, parsley, spices and hot sauce (to taste).  Cook 10 minutes.

 Add the rice, cover and cook 25-30 minutes.  Add bacon, and cook until rice

is done. (You may need to add more broth, feel free to add it at any time

after adding the rice)
