CANDIED SWEET POTATOES
4 large sweet potatoes (4 pounds)
3 cups of granulated sugar
1 cups of firmly packed brown sugar
1/4 teaspoon ground nutmeg
1/8 teaspoon cinnamon
1 1/2 cups of Dr. Pepper
1 cup of small marshmellows (optional)
Boil the potatoes for approximately 30 minutes.
Drain the water from the potatoes and carefully peel them.
Cut the potatoes length-wise into 4 strips per potato
In medium saucepan combine sugar, Dr. Pepper, brown sugar, nutmeg, and cinnamon. Mix well and bring to a boil. Let simmer uncovered for 20 minutes, stirring occasionally.
Heat oven to 350
Place potatoes in casserole dish and pour syrup over them.
Cover with aluminum foil and bake for one hour.
If you want to add marshmellows, after the potatoes have cooked, pour the marshmellow on top. Then put oven on broil and place dish in the top rack just beneath the heating coils. Remove when top of marshmellows brown which will take 1 to 2 minutes.
