Cajun Grouper

INGREDIENTS:

2 3/4 lb grouper amberjack or cobia filets
1 tbl spn minced garlic
Salt and pepper to taste.

SAUCE:

1 10 oz can RO-TEL tomatoes
2 14 oz cans diced tomatoes
1/4 cup chopped onion
1/4 cup chopped banana or bell pepper
1/4 cup sliced okra
1/4 cup sliced celery

In a sauce pan combine two cans diced tomatoes and one can RO-TEL brand tomatoes. Add diced onion, chopped bell or banana pepper, sliced okra, and celery. Simmer until vegetables are tender. Ladle a small amount into the bottom of a baking dish and place the filets in the sauce, cover with minced garlic and salt and pepper. pour the rest of the sauce over the filets and bake at 375 for approximately 45 minutes. Serve over saffron rice. enjoy!
